Recipe: Coco Loco Pudding

Ingredients

  • 1/2 cup chia seeds
  • 1/2 cup shredded unsweetened coconut
  • 1 1/2 cups water
  • 1/2 cup coconut milk
  • 1 heaped tablespoon almond butter
  • 4 tablespoons agave nectar (or 5 tablespoons sugar)
  • 1 teaspoon raw cocoa powder
  • 1 pinch powdered ginger
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon cinnamon

Directions

Blend all ingredients together for 1 minute, then pour mixture into a glass or stainless steel bowl.

Wait a few minutes then stir. (You'll notice the chia seeds starting to gel.) Wait a few more minutes then stir again.

Place bowl in refrigerator for about 20 minutes.

Can be enjoyed cold or at room temperature. Keep in an air tight container in the fridge for up to a week.
